I love trying new recipes and Joanna has certainly given us some great ones. I'm trying to try each and every one she has posted. 

I'm posting a few changes I've been using that hopefully will give you some flavorful options. I've really tried to enhance the flavor without ading too many calories.

I shop a lot at Costco because buying in bulk saves me time. I buy the vacuumed package of boneless and skinless roasted chicken breast to add to Joanna's Soba  Noodle soup. I added a small amount of fresh, grated ginger to her recipes and it was delicious.

To her Prawn Pita, I added Costco's Tzatzika Greek Yogurt Sauce (40 calories /2 tablesoons) and 3 chopped Greek Olives (9 caloies each). I also added thinly sliced cucumbers to the sliced tomatoes.

To her Rainbow Couscous Salad, I added cilanto and lime juice rather than the lemon juice.

To the Chunky Veggie Barley, I added eggplant and cauliflower. To enhance the flavor , I threw in 5 bay leaves. Next time I make this soup, I want to try adding a little curry.

One of my favorite recipes is her Overnight Dreamy Oats. This doesn't need any changes but I used unsweetened almond milk because it has such few calories. I then splurged on Honey Greek Yogurt rather than plain. 

All in all, I've been exremely impressed with Joanna's recipes and I am losing weight. One teacher at my school asked me how I was doing so well and I gave her Joanna's website. She came back the next day and suggested we buddy up and fix double lunches and swap every other day. It certainly makes us accountable to each other and it sure is nice having someone else treating you to lunch every other day!

I try to eat 1-2 apples a day for one of my snacks and I always have a Cliff Energy Bar in my purse in case I need a little extra boost.
