On a whim, I decided to check my weight. 

I figured it would change a bit because I have avoided dairy and especially carbs. Starting on the 2nd I got back to exactly tracking my calories. I have eaten 100 or 200 calories less than allowed, because it is hard to hit that number exactly. I have also been less than 100 carbs a day. My doctor told me to eat a maximum of 200 carbs a day. My energy level is up since I started on vitamin D a few weeks ago for my low vitamin D. 

Just like 2 1/3 years ago when I first started low car, I can feel my body changing. 

I haven't exercised yet. I know that diet alone does a lot, and for permanent results, I need to boost my activity level. We had a few really cold nights recently, and I piled on the blankets, but I still kept waking up cold through the night. I am sure forcing my body to keep warm has helped.

I am also eating 3 oat bran muffins a day for breakfast, only 57 carbs. I was pointed to the 8 week cholesterol cure in my late 20's as a way to avoid medication. It works well for me. I had my physical in December (I put it of a couple years.) and my lax diet and re-weight gain has of course fiddled with my cholesterol and fasting sugar levels.

It is just simple changes that make all the difference. Following a healthy diet takes a bit more effort. Melissa, as do many others, advocates meal prep for the week over the weekend. I make 2 dozen muffins at once, which last 8 days, if others don't eat them. ;) I have a bunch of frozen chicken breasts that I plan to cook today and get on the right start.

I have also made salads the night before, before I go to bed, and just used canned tuna. 

A few years ago, my microwave died, and I have not replaced it yet. I have found that because my family did not have a microwave until later in high school, that I easily remember how to get by without it. It also makes it less convenient to buy junk that has to be microwaved. 

I also don't feel deprived when I eat healthy. Unlke most of the population, I don't like mayonaise and nearly all salad dressings. I like the taste of fruits and vegetables. Since I am not deprived of those empty calories, it makes it easier to stick to and reap the benefits of eating good stuff. As a kid, my Mom always fixed canned spinach with vinegar. I hated it. I once had canned spinach fixed without vinegar and I liked it. I begged my mom to stop putting vinegar in the canned spinach. She usually added it out of habit. Now, I rarely eat canned vegetables. I only eat fresh or frozen. As for spinach, I prefer fresh over slimy canned spinach any day. 

I am sure, if anyone is reading this rambling post, will wonder, how can anyone not like mayonaise? Because it tastes like mayonaise! Some people don't like broccoli, I love broccoli, same thing. Mayanaise leaves a coating on my teeth and tongue that is just nasty. So my dislike of mayonaise is both a taste and a texture thing. I don't understand why so many restaurants whether fast food, or sit down, assume everyone wants mayonaise on their hamburger. I always clarify what they put on them to make sure I don't get mayonaise, as I will not eat it. 

That's enough rambling. Time to vacuum up the cat hair from my son's cats so I can get in a workout.
