What great flavor to switch up all the ground turkey I eat!

I served it with a small portion of quinoa and it was the perfect starch for this dish. Instead of prefrying thm in oil I used a small cookie scoop and baked them in a non stick mini muffin tin.  Mix meat and sauce early in the day so flavors develop! Be sure to grate the zucchini into paper towel or cheesecloth and wring out the extra water before combining with other ingredients or you will have turkey soup!
