For my Sunday lunch I wanted to eat something smooth and creamy so naturally potato mash comes to mind. But how do I cut on my calories while enjoying nice mashed potato? Simply cut out the cream and butter and add in other ingrediences for some extra flavour!

For my mash I used one potato and one carrot which I cut up in small pieces and boiled until soft in salted water. I added in 2 grilled garlic cloves, dash of milk and a teaspoon of olive oil - mixed and mashed it together and it was ready (salt and pepper to taste of course)!

Next I just put it on my plate along with a single chicken breast and grilled red onion which I grilled with no oil on my small electric grill. I highly recommend investing in such a grill because you do not really need to use any oil with it, it is fast and locks all the moisture in your meat. The moment you cut in your grilled breast you will see all the juices flowing out in a stream - I was so suprised by that because I never got this kind of "moist" chicken by cooking it in a skillet or a fry pan.

Serve with a cup of mixed salad drizzled with balsamico and voila, your tasty and filling lunch is ready!
