I am so excited! My mom just arrived for her first visit to New York City! Yes I planned this diet bet that we are both on during a time of semi-vacation. Am I CRAZY??? I am hoping this will keep us a little more accountable and of course we will have our cheats, but they will be strategic.
So somewhere along the way I read that when you fly and there is a couple of hours or more time change that the first breakfast you have there should be a bigger one to help reset your time clock. Not sure how true it is, but it does seem to help. So instead of our usual morning smoothie I made this yummy crock pot breakfast casserole (she arrived VERY early this morning).
Kristin’s Crock Pot Breakfast Casserole (this is a combination of recipes online & I made my own Paleo version)
Here is the recipe:
10 strips of bacon
3-4 shredded turnips or you can always use a couple cups of shredded hash browns
¼ C coconut milk
1 onion, peeled and chopped
1 bag (8oz) shredded cheese (not paleo, but I don’t have issues with cheese so I am putting it in)
salt and pepper to taste
1 clove garlic, peeled and minced
12 eggs
1. Rub coconut oil inside crockpot
2. Cook bacon til crisp. Cut into pieces.
3. Saute onion and garlic
4. Layer ingredients, starting with turnips and ending with cheese: 1/3 turnip, 1/3 bacon, 1/3 onion garlic, 1/3 cheese, repeat.
5. In large bowl, mix eggs, coconut milk, salt and pepper.
6. Pour egg mixture over crockpot. Cover and turn on low. Cook 8-10 hours.
