I need a better name for this as I've been calling it my diet day soup but it's so good I eat it all the time. I workout A LOT!  That means I need a rest day from time to time and on those days I do my fasting calorie days, typically 800 or less. I can pack a lot of nutrition and satisfaction in to those cals and it keeps the scale in the right direction.

 

This soup I put together in 10 minutes and you probably have everything in your kitchen already. This is for one very hearty serving. 120 ish calories and a lot of flavor. No cabbage I promise! Keeps me full for up to 3 hours.

Vitamin c, potassium, omega 3, protein and more!

2 Tbsp freshly minced yellow or white onion

1 tsp olive oil

1-2 tsp dried italian seasoning blend

pinch chili flakes

2 c chicken or blonde vegetable stock (better than boullion no chicken veg base is fantastic)

2 Tbsp dried orzo pasta

two handfuls fresh baby spinach or chopped regular (or use frozen if that's all you have)-even kale

1 omega-3 enriched chicken egg

Juice of 1 fresh lemon

1 Tbsp shredded parmesan

 

In a med saucepan over med heat wilt the onion in the olive oil for about 4 minutes then add the spice blend and warm it another minute. Add in stock and bring to a boil over med high heat.  Once boiling put in the orzo and reduce to medium and cook for 8 minutes.  Add in spinach and chili flake and cook for one minute more then remove from heat.  If using kale add in 4 minutes into cooking time and continue to cook for 5 minutes to total 9 minutes for perfectly cooked orzo and greens.

Beat up egg in a small bowl and drizzle it without moving the pan. Let rest 2 minutes  then add the juice of a whole fresh lemon and give a slight stir . Pour into your soup bowl . Top with cheese and enjoy!

If you're cooking for more than one add in some cannelinni beans after you take your portion out and warm through.
