Hey all! 

I posted a picture of a crustless quiche that I made the other day and a few people expressed an interest in the recipe, so here it is! When I made this recipe, I plugged the ingredients into the "recipes" function of Myfitnesspal, so that's where the nutritional info came from. 

Ingredients

1 cup yellow squash

1 cup zucchini squash

1 cup diced yellow onion

2 cups frozen chopped kale

1 oz grated Asiago cheese (I used a kitchen scale, but I was about 1/3 cup if you don't have one)

2 cups egg beaters (or egg makers, or egg whites)

1 cup 2% milk (or any milk substitute)

Directions

1. Preheat oven to 350°F

2. Dice squash, zucchini, and onion.

(optional additional step, sauté onions, squash and zucchini to give it a little caramelization. I didn't do this because I didn't want to use any butter or oil.) 

3. Toss all veggies (onions, squash, zucchini, and kale) with grated cheese to get them pretty evenly mixed up.

4. Spray an 8x8 baking dish with non-stick spray.

5. Put veggies into the baking dish.

6. Mix eggs and milk together in separate bowl. Add salt and pepper to taste.

7. Pour egg mixture over veggies in baking dish. Pat down any veggies sticking out so they are covered by the egg mixture.

8. Bake the quiche about 45 minutes, until the middle is no longer jiggly.

(I didn't actually time the quiche when I made it, so I'm giving you my best guess on the time. Just keep an eye on it. The edges will begin to brown before the middle is fully set, but don't take it out too soon.)

9. Allow to cool for a few minutes, then cut into 6 pieces. 

You can substitute any veggies you prefer. I'm sure peppers, spinach, and tomatoes would also be delicious.

I hope you enjoy this recipe. I've been eating a piece for breakfast every morning. It reheats in the microwave very well. I usually have it with ketchup because I didn't add any salt or pepper to mine (because I forgot!).
