I really enjoy tuna with some mayo & pickles. But I’m reading I should only eat 2 servings a week due to mercury. What can I try to replace this with that’s similar?

If you want something with a similar flavor profile you could try mock tuna salad made with chickpeas instead of tuna. Just Google "vegetarian tuna salad" and there's lots of relatively simple recipes!
