Small victories, right?
So my daughter and husband are going on an ice fishing trip this weekend, which meant dad last minute preparation tonight. Cue, no dinner plans, and running around. Husband offered to go get us fastfood, but I opted out, instead ate a CutDaCarb wrap to make a crunch wrap, and loaded it with veggies! A few months ago, I totally would have opted for the drive thru.

  • Few more tips on meal prep!
    I posted yesterday a few things I always have in my fridge and some simple ways I throw it together. I got a couple questions on the salad too!

    First, the way I typically meal prep, I bulk cook the items in my last post, maybe put a few meals together, and usually have more of some thing’s left over than others. That makes it so maybe one night I need to restock and prep protein, then two nights later I make a new carb, then a day later I make a new salad. One small thing I prep during the day/week instead of one or two giant meal prep days a week. So when people ask me about the salad staying fresh it’s because I’m making one every 3 or so days, putting it in a closed container. The lid I got for my big mixing bowl is from OXO (amazon or Bed Bath and Beyond) and comes in different sizes. It lays flat across the top and creates a suction with the bowl to stay sealed. LOVE IT.

    What’s typically in the salad:
    Chopped up greens- I prefer something like spinach, arugula or a mix. Dark leafy greens over romaine.
    Grape tomatoes- the salad and tomatoes will last longer if you don’t cut em up.
    Shredded carrots
    Chopped celery
    Bell pepper chopped
    Sprouts
    Beets- my fave I buy premarinated at Whole Foods. I think the brand is Love Beets. I keep these separate because they have more juice to them and add them when I’m ready to eat or pack my lunch.

    Dressing- I put it on when I’m ready to eat or pack. I don’t make any sort of fancy dressing but I do make sure that I eat a reasonable amount. If the dressing is thicker you can add a tiny splash of water to a serving and mix it up. It doesn’t change the flavor but it spreads easier so you don’t use as much.

    There’s a million different ways to make salads and this for sure isn’t the end all! Just something that works for me and may work for you!

Part of it is that insulin stimulates testosterone, but I think it’s also just generally less inflammation/body is less irritated :sweat_smile:

  • I got a severe sprain (totally torn ligaments) on my “bad” ankle - which is good I guess as by the end of this saga, surgery or whatever, I’ll get a stronger ankle :)

    but I gave myself permission to totally pig out “to fuel healing” and am now up 10 full lbs from 3 weeks ago!

    I know some of that is water, but daaaang...how dysfunctional was my eating to put on that much weight (rhetorical...I know pretty dysfunctional 😅).

    I had a cast, but 36 hours in to the 2 weeks I actually got such cast anxiety (maybe from restless leg+Benedryl and Cleithrophobia combining) that I went to the ER and had it removed! Now in a walking boot 😓 better for me but not great for the ankle.

    Need to refocus on my diet and get back on track ❤

All I did was step off a curb in squishy flip flops - tore at least 1 ligament completely! They put this cast on in hopes that the ligament will heal up...thank you for all the good wishes, you guys!!! :heart::heart::heart:
