4. Spread a quarter of the mixture on top of each chicken breast, close the sides carefully until they meet in the middle and secure with a toothpick.

5. Bake in the oven at 210º C (410º F) for about 20 minutes, and enjoy!

Hi Sue! Here’s the recipe for the chicken cannoli. It’s actually super simple and I make it all the time with different fillings depending on whatever I find in the fridge. Here’s the recipe + nutritional info for the one I made last night. Please excuse any mistakes, English is my second language!

INGREDIENTS:
(serves 4)

• 4 boneless chicken breasts
• ½ an onion
• 3 mushrooms
• 50 gr ham
• 100 gr low fat cream cheese
• 30 gr low fat grated cheee

1. Chop the onion and mushrooms and saute them briefly on a pan with a teaspoon of olive oil. Chop the ham (I use a food processor).

2. Mix the onion+mushrooms, ham, cream cheese and grated cheese into a bowl.

3. Butterfly the chicken breasts (cut them open, if you don’t know how here’s an easy tutorial: http://www.goodhousekeeping.com/recipes/cooking-tips/butterfly-chicken-breast#slide-1)

Thank you, Pilita ... I'm figuring it out ... it's ok. I think I may try a smaller group next time, but I've been doing well on the diet this week ~ even got my treadmill working again yesterday. :) This has been great motivation, and I do appreciate it!! How are you doing?
