
I thought I'd write this out... since I am sure most of us on this DietBet will be asking each other... what's your plan!?
So, I'm already Vegan... so I will continue eating a Vegan diet. Easy! But in addition, I've decided to go high-carb, low-fat Vegan. I started it this week - eliminating oils and overt fats. I've already lost 2bs! wowza!
What does this look like?
For breakfast I have a large portion of fruit. Example - 20oz container of watermelon, 4 peaches, or 2 mangoes. Something like that. I also will eat oats with fruit.
For lunch I have a large salad with falafel and a low-fat dressing
For dinner I have either potatoes, rice, or rice noodles paired with lots of veggies! Things like lowfat curries, stir fries, lentil dishes, and steamed veggies.
So far, it's very easy and very delicious, and my tummy has thanked me for eliminating olive oil, tahini, and vegan mayo/cream cheese, etc.

As for exercise... I won't be changing much. I currently do 2 days a week with a personal trainer and then 4 days of cardio and strength training at home. I am going to add in more hiking and walking, though!
