I couldn't resist the temptation. MANCAKES at half price. MANCAKES is a high protein baking mix with very few ingredients (oats, garbanzo, fava, almonds, etc). I checked online reviews and a detracting factor was they are "too oaty". I love oats.

The first attempt went awry for a few reasons, one of which is that I do not know how to make pancakes. I burned everything or else glued it to the pan in a sad, impossible way that made my husband nobly take over and chip off my burnt mess.

But I was still intrigued. The flavor, as I tasted my batter and the burned bits, was alarming. "Oaty" was not the problem. "Completely unsweetened with beans in it" was. So I began to add things.

By a happy accident I found pineapple juice gives the strongest sweetness with the least additional sugar. I also found generously melting coconut oil in the pan imparted a delicious flavor and slightly fried the edges. I began scheming.

1/2 cup of baking mix yields about 3 pancakes, which is a good yield. I just made a giant pancake and then cut it into fours. By the end of my mad scientist experimenting I had doubled the yield due to how much stuff I added (or, halved the mancake mix, if you prefer). I added the pineapple plus Siggi plain yogurt, an egg for extra binder, unsweetened grated coconut, and lots of seeds.

But I was unhappy with the sweetness. Yummy as it (eventually) was, I didn't really want a pineapple pancake in the morning. Then I remembered my real breakfast. When I mentioned I love oats, I mean that I have them almost every morning doused in a mix of flax, chia and sunflower seeds (or recently hemp seeds) with a healthy pinch of sea salt and some black coffee.

I was going to make the MANCAKES savory. I added seeds and salt and yogurt, greased my pan and managed to barely burn any of it. They now sit, cut into wedges, in my freezer for emergency breakfast or snack.

i really liked the MANCAKES but I won't buy them again. I would just make my own recipe for the baking mix and save my money. If you get your hands on a package, think about making a savory cake instead of a sweet one (scallions and soy, rosemary and sea salt, even some cheese or maybe meat!)
