Tie die cupcakes. Have y'all seen those? Look on the baking aisle at the grocery store - it's there! My fiance and I were talking about cupcakes for our son's birthday this weekend. He asked if I'd thought about it. I said a little...and that was it. And he wanted to get into detail...while I'm sitting there, drooling, salivating, my mind racing and daydreaming about piling a plate HIGH with the lovely fluffy wittle bitty gems, with a big BIG glass of milk, and how deeeeeeeeeelicious it would be...where was I?, oh yes. The detailed convo...so I said okay well let's just talk about it tomorrow, hastily so we'd stop talking about it and I could get a grip on my craving. I slept on it. And dreamt some more...of cupcakes. More more more cupcakes.

I woke up this morning and thought of - yep - cupcakes! And quickly got my mind off of it. Thinking no no no Holli you mustn't you can't! Then I thought - with horror and clenched teeth - do I really have to smell those goodies baking in my oven while my whole house smells of - yes, again - CUPCAKES for DAYS - and to watch my family devour them while I sit there sucking on a sugar free mint?! Well miss Scarlett - I think NOT!

I WILL have a cupcake. MAYBE TWO! HA! Because I remembered something Chris said in his book...eating protein with a meal slows the digestion rate way down and keeps your insulin steady. And what happens when we eat sugary foods? They break down quickly and race into our bloodsteam and surge us ahhhhhhhhhhhhhhh with a sugar high at lightning speed. But does it have to be that way?! What if...what if instead of icing, I used plain fat free greek yogurt sweetened with cinnamon and stevia? YES! And what if....whaaaaaaaaaaat if I topped said yogurt topped cupcake with a few walnuts for a healthy fat and to further slow down the break-down speed, and avoid that sugar high altogether? And thus NOT trash all my hard work, nor risk gaining weight from my indulgence? YES! I do believe I have nailed it.

So this will be my cupcake. And I'll just make tomorrow a low carb day too so that the fat in the walnuts will be allowed and the treat will also be allowed (not so on high carb! no no no!)

I am very proud of myself for thinking ahead and coming up with this grand plan to have my cupcake and eat it too. Really looking forward to having one...or maybe two (snicker snicker).
