Everything you're eating sounds really healthy, but are you tracking your caloric intake? Are you measuring the peanut butter? (One of my first surprises when I started tracking my calories was that I was making peanut butter sandwiches with two servings of pb = 360 calories for the peanut butter alone, before counting the 180 for the bread. That was almost half a day's calories for a meal I was eating for its convenience value.)
