This morning I unexpectedly experienced the best breakfast. My husband even enjoyed it (and this is supposed to be diet food!). He called me on his way into work to tell me how much he enjoyed it. I started out with my ice-cold lemon water to get the metabolism ramping first thing, showered and then made my yummy breakfast. I couldn't help but write about this recipe. So here we go: Mediterranean Eggs.
Ingredients--
4 egg whites (today I used the kind that comes out of the carton)
1/2 a tomato (raw or diced from a can)
1/2 c. of red onion
2 T of fresh basil
2 T of Parmesan cheese (the original recipe called for fat-free but I haven't found fat free parmesan anywhere. I also used the shaved kind not the kraft shaker bottle kind)
1-2 T of quality oil of your choice (I used coconut oil)
Saute the red onions until clear in 1/2 the oil in a skillet (I used my cast iron skillet, not sure if it made a difference)
Add in tomatoes and continue to lightly cook and saute.
Whisk egg whites and parmesan cheese in a bowl together until frothy.
Remove veggies from pan as much as possible, add in additional oil and spread all over the pan.
Add your eggs on medium low heat. Immediately add in the veggies back in, quickly stir, and then let everything sit on the heat until the egg whites turn white.
Turn on your broiler while waiting for the eggs to heat.
Once the eggs are mostly white put entire pan into the oven-broiler for a few minutes--look for the eggs to become a little puffy and slightly golden.
