Here's my recipe! It's an interpretation of Applebee's Thai Shrimp Salad.
It makes a very large entree sized salad, about 400 calories.
The original recipe called for wonton strips and chopped peanuts or sliced almonds,
but I didn't want the extra calories and didn't think the salad needed them.
You can also use any protein you want, chicken was the easiest.
Add or subtract the salad veggies to your own tastes.

Thai Peanut Sauce (70 calories)
.5 T Simply Jif creamy peanut butter
1 t soy sauce
1/8 t minced garlic
1/2 t brown sugar
1 T lime juice
1 T coconut milk
(Blend all ingredients)

Thai Vinaigrette (95 calories)
1 T lime juice
1 T soy sauce
1/2 T brown sugar
1/2 t minced garlic
1/4 t chili powder
1 T extra virgin olive oil
(Add all ingredients to an airtight container and shake until blended)

Salad (240 calories)
3oz grilled chicken
3 cups Dole Asian Blend chopped salad
2oz Kale
1/2 cup red pepper, sliced thin
1/2 cup grated carrot
1/8 cup edamame

Add Asian salad blend, kale, red pepper, carrot, and edamae to a bowl.
Toss with vinaigrette. Heat chicken until hot, toss with peanut sauce and
add to the salad.

This is 1 serving of salad.
