Finally feeling better today! I had to take a sick day yesterday and stay home, but I'm so ready to be back out in the world, I'm tired of being in the house!  Even with all the bad weather, I was really energized this morning and excited to have a normal day.  Yesterday was great though, very restful and cozy. I was able to spend a lot of time cooking and trying some new things - I roasted coconut with coconut oil and sea salt, it tastes INCREDIBLE, and then made sweet potato chips with my new mandoline. I need to start trying more new recipes, I've been in a bit of a rut just eating the same few meals all the time and I'm getting tired of them.  Maybe tonight?


Also, in the spirit of the Daily Carrot email, one of my favorite recipes - my friends jokingly refer to it as Salad of the Month because I was initially going to come up with a new salad every month and then stopped. I've been making this since college: 


Salad of the Month

Pack of spinach

Pack of strawberries

1/2 cup pecans

1/3 cup crumbled goat cheese

1/2 cup olive oil

3-4 tbsp balsamic vinegar


1. Whisk up the olive oil, vinegar, and three crushed strawberries (I use a meat tenderizer, ha) for dressing.

2. Toss and enjoy!
