Hi Mia, it usually takes me about 5 hours to prep on Sunday, then aside from breakfast, I'm done for the week! So it gives more time with my kiddos in the evenings during the week, and during the week is when life is always hectic so it's nice to not have to worry about what to make for dinner, just heat up a meal and eat :) I've done full weekly meal prep for 6 weeks now and haven't had a problem with food going bad. I shop on Saturdays and check dates on meats and hen cook it up on Sunday and it's fine until Friday. Typically, if I make seafood, I will eat those dishes within the first couple days. If you make a batch of spaghetti (I like to have mine with spaghetti squash instead of noodles) that is a dish that would be super easy to freeze for a dinner later isn't he week, if that made you more comfortable. :)
