Do you eat meat on this diet or are protein sources through legumes? Also, is tofu considered a white food?

Excellent questions! Legumes are NOT the only source of protein, just really the only source of carbs. You can still have unlimited quantities of proteins like all forms of beef, pork, and poultry (preferably meats NOT treated with hormones or antibiotics); eggs; turkey bacon or organic bacon; all fish and seafood (even canned); unflavored whey protein isolate; brown rice protein, hemp protein, and pea protein; and of course legumes. Tofu is NOT allowed on Slow-Carb except on cheat days, and this is because studies have found that the estrogen levels in tofu may be harmful to humans.
