About a month ago I got really sick of the 3 different kinds of breakfast I was usually using and I found this fantastic recipe and I'm addicted! I got the recipe here and I changed it a bit so it would fit for me. 

 

 

Preheat your oven to 375 degrees. 

2 cups old fashioned oats 

6 tbs soy protein powder (You can skip this or use what ever protein you like)

1 teaspoon baking powder

1/4 teaspoon salt

1 1/2 teaspoon cinnamon

1 cup milk (I used unsweetened coconut milk, but dairy or other milks will work, too)

1 egg

1/2 cup mashed banana (about 1 1/2 medium bananas)

1 large apple, peeled, cored, and diced

In a large bowl, combine the oats, baking powder, salt, and cinnamon.  Add the milk, egg, and mashed banana and mix until combined.  Stir in the apple.

Grease a muffin tin and fill each cup with the oatmeal mixture to just about the top.  Bake in a 375 degree oven for 20-25 minutes, until the cups are set.  Store in the fridge or these can also be frozen.

For me three cups are e perfect portion for breakfast + low fat greek yogurt and almonds, berries or fruit on the side. I store them in the fridge and the heat them up a bit in the mornings. So good!
