A key to my success is meal planning. This makes a great dish for breakfast, lunch, dinner or brunch! It freezes well and is tasty and satisfying. Make it your own by topping it with your favorite sauteed vegetables or serve with salsa and sourcream. Nice enough for special occasion or company.

Egg Puff

6-8 servings

Beat 10 large eggs

Add and mix well

1/2 cup whole wheat pastry flour

1/2 tsp baking powder

Mix in:

1 pint of cottage cheese

8 to 16 oz. grated cheese

1/4 tsp salt

7 oz. can diced green chiles

1 small can sliced olives drained and rinsed

Preheat oven 350 degrees F. Pour into 9x13 dish lined with parchment paper. Bake 35 minutes or until set.

Serve with sourcream and salsa. So much variety you can use in this easy recipe. Substitute your favorite vegetables or add cooked meat. Sprinkle with smoked paprika before baking. So good!
