How long have you been gluten free? I just made the change a few months ago and I just went dairy free this week too (intestinal issues). Definitely hard, but I hope it's worth it!

I've been gluten free for two years now. Dairy free in addition would be quite a challenge!!!! I have Hashimoto's, an autoimmune condition that attacks the thyroid. Gluten looks like thyroid tissue so my antibodies go overboard. When I went gluten free I felt a whole lot better. Now, since I see it as an allergy, it isn't hard to be gluten free (like wanting beer or cake). I think that's the trick, once you feel better you won't want it and it won't seem that difficult at all. Plus with all the resources of the internet, it's a lot easier than ever to find alternative recipes. I think you're on the right track though, you have to find out what you can tolerate or not for optimal health. It is hard, but you can do it!!!
