Sydney - how do you do your salads so that you can make sure to get enough calories, carbs, etc? I want to start having more salads, but I can never seem to figure out the "right" balance!

I bought some quinoa recently, but it's still sitting in my pantry - have any tips on how to incorporate it into a salad? :)

Oh quinoa is one of my favorite finds. Prepare it just like the box says (2:1 water:quinoa, boil, cover, let sit on low until water is absorbed), then put it in a tupperware container and keep it in the fridge until you need it. For salads, I just mix about a quarter cup cooked quinoa in whatever I'm having to add some carbs. If I want something more substantial than a salad, I'll do quinoa with plain Greek yogurt, chicken and some buffalo sauce, then just head it up in the microwave. It absorbs flavor really well, so you can put it in so much. I'm a big fan.

Hello There! I was wondering if you would give me the recipe for the zucchini pasta with salmon and lemon vinaigrette, sound very yummy!

It is yummy! And super easy. I took a grater to a zucchini to make it into "noodles." I put that in boiling water to make them soft. I cooked some salmon (without any marinade or anything), then topped it all with a fantastic lemon vinaigrette made by The Tasteful Olive.

Theres only 10 days left and I feel ya girl! I havent made much improvements either. However, i recently starting juicing and avoiding most sugar and starch altogether and its helping me. At most in terms of bread ill have 2-3 slices of wheat bread in a day. If i get hungry i fill myself up with all veggies and 1 fruit. I will be doing that for the rest of the month. Plus i stop eating past 7. Good luck!
