Hi all, I know this is a bit late for the high holy days, but if anyone wants a simple substitution for a potato kugel to eat in a sukkah, or just because, here is a cauliflower kugel (it won't be confused for potato kugel, but it's good in its own right)

8 c cauliflower florets (either 2 heads of cauliflower or Costco bag)
olive oil
4 c minimum leeks (onion ok)
6 tbs matzo meal (bread crumbs ok for Rosh Hashana)
3 eggs
1/2 c fresh chopped parsley
1/2 c fresh chopped dill
1/2 c chopped toasted almonds
salt and pepper

Prep

preheat oven to 350
oil a 11x7 baking dish


cook cauliflower in boiling water about 10 min till tender--drain, transfer to large bowl, coarsely mash (if you have potato masher great, I use a fork)

sautee onions/leeks in large skillet over med-high heat until tender, begin to color (about 5 min) OK to caramelize

In sep bowl mix together:
matzo meal
eggs--lightly beaten
1 1/2 tsp salt
pepper to taste
1 tbs dill
1 tbs parsley

add cauliflower to mixture

spread cauliflower mixture evenly in prepared dish

combine remaining dill, parsley and almonds and about 2 tbs oil

evenly spread almond/herb mixture over cauliflower

Bake about 35 min uncovered, until center is set and kugel beginning to brown; let sit 10 min.
