You have a wonderful and powerful why for losing weight and making some changes! Sounds like you are well on your way to crushing some goals!! Something I have found super helpful for salads (as I agree they take too long to make) is that I will chop up all my greens really small and keep them mixed together in a large Tupperware. I then will prep two types of meat and dice up some other veggies I can top with. That way all I have to do is grab out 3 containers and dump what looks good on my salad greens. I also recently discovered that chopping up a mix of greens makes my salads more enticing, instead of just spinach or lettuce I now do a mix of Spinach, Kale, herbs (cilantro/Parsley), any of the leafy greens that look good that week, and chop it up in small pieces so you can get a good mix in each bite! :)
