Most Sundays are what I like to call Lazy Sundays - that means staying home, in my PJ's, reading the Sunday paper, catching up on TV shows, doing some chores and it also means getting prepared for the week. 

I don't know about you but when I am losing weight I seem to be really hungry by the time I get home from work and want to eat immediately! I don't want to chop, stir, cook and wait. I also don't want to have to make breakfast or lunch every day. I need something that I can grab and go.

It makes it a lot easier for me to have things on hand that I can heat up - I know this isn't for everyone because a lot of people don't like leftovers but it keeps me on track and less apt to grab multiple hand fulls of almonds to tide me over or even worse, something junky, which is more likely than almonds. LOL 

Things I prepare ahead of time:

  • Fill 14 water bottles and keep in the fridge (1 n the morning and 1 at night - the rest of my water I drink at work and fill up there)
  • Roasted veggies - Roasted cabbage to me is kind of like noodles and makes a great side dish. I also like roasted cauliflower, sometimes I make a mix of roasted peppers, onions and zucchini to add to eggs or egg whites to make things like a frittata. Roasting adds a lot of flavor. 
  • Cook a couple of chicken breasts, a steak, salmon or hake fish
  • If I'm doing Medifast make 3 of my Medifast soups or chili for lunches. I add 1/3rd of a can of diced tomatoes to my Medifast chili, beef stew and ziti. Which is why I make 3 at a time. 
  • Hard boil eggs
  • Maybe defrost a pot roast or think about a crockpot meal for later in the week. Here is your hot fresh meal when you get home - nothing like opening the door to the smells of dinner being ready. 
  • Make Kale chips
  • Get salad greens ready
  • Slice cucumbers and onions to put in vinegar water 
  • Prep vegetables
  • Make weightwatchers vegetable soup (you can add any vegetable that you want).  http://www.weightwatchers.com/food/rcp/RecipePage.aspx?recipeid=99961 
  • Cook a package of turkey bacon - use as a toping for things it adds a lot of flavor, sometimes I have a piece or 2 for breakfast

Okay - I don't do all of these every Sunday but you get the picture, there are lots of things you can do ahead of time to get ready, to keep you on track and make things easier. 

Focus on things that add flavor, use spices, herbs, diet food doesn't have to be bland or boring.
