This salad is delicious and full of super healthy foods with some protein, good fats and lots of fiber. All the ingredients are anti-inflammatory.

Following an anti-inflammatory diet can help counteract the chronic inflammation that is a root cause of many serious diseases like diabetes, heart disease, strokes, migraines, thyroid issues, cancer and many other diseases.

 

Salad

1 Hard boiled egg

1/2 Avocado

Handful of spinach

Handful of Kale

1/2 an Apple

1 Tbls dried cranberries

1 Tbls pumpkin seeds or pepitas

1/3rd of a cucumber 

2 radishes

 

Dressing

1 Tbls Coconut Amino Acids

1 Tbls Almond butter

1 tsp water (add small amounts of additional water to get the consistency you like)

 

Chop all ingredients combine in a bowl, mix your dressing pour over salad and enjoy! 

Variations –

  • You could add chopped almonds or walnuts instead of pumpkin seeds
  • Instead of a handful of kale I like to use the 7 superfoods Sweet Kale salad mix by East Smart it has Kale, green cabbage, broccoli, Brussels sprouts and chicory in it
  • I also don’t love radishes so sometimes I don’t use them but they do aid in digestion and have a lot of nutrients
