I have children and a husband and full-time job so I know what you mean. I also don't enjoy cooking so it is a chore for me. I have found that I do better if I cook in volume and let the crockpot do some of the work. For example, if I roast brussel sprouts, I roast 3 pounds, instead of 1 baked potato, I fill up the oven, I put as much chicken in the crock pot as it will hold (freeze the stock or use in another dish immediately). When I make a casserole, I make a BIG ONE then cut it in serving size portions, I keep a few portions out for the next few days but freeze the rest in quart freezer bags (couple days worth each). When I first began to do this I was cooking A LOT but over time, I find I can now cook one day and eat for a week. If I don't feel like cooking on the 7th day, I now have frozen reserves of previously made meals on hand. If one weekend I get the cooking bug I stockpile. Just thought this may help someone who doesn't always have the time to cook everyday.
