Since I started this journey in January, I have been making/eating salads every day for lunch during the week. Salad with a yogurt on the side. It was going really well until last week, when 3 out of 5 days I just didn't want it. It didn't sound appealing so I ended up eating fast food and feeling awful physically and mentally.

This week I'm gonna switch it up. I made a big pan of my favorite recipe--a healthy enchilada bake. I put it in individual sized containers, and I will take one each day this week. I'm excited about lunch again--actually looking forward to it. That is how I felt about the salads at first, but then they got borning.

So, I have learned that I am not the kind of person who can eat the same thing every day forever. Now, I know, and I am hoping next week will be better!
