Generally, where I work we may be busy into our lunch breaks so I try to take ready-made appropriate foods.  This is a go-to.  It is nutritious and filling.


16-20 oz ground lean turkey with taco seasoning mixed in

1 bag frozen bell peppers and onions (or 3 bell peppers, any color, 1 medium onion sliced thin)

1` can pinto or kidney beans, juice drained and beans rinsed

Optional: Taco Seasoning Mix

              1 capful of Wright's Liquid Smoke

              May substitute can of beans and Taco Seasoning for Chili Beans 

Directions:  Brown turkey, breaking apart into crumbles.  Drain juice into a container and place in the freezer to congeal fat, which can be added back later for more juiciness.  Add the rest of the ingredients and simmer until desired doneness.  Makes 4-5 hearty servings.
