
Tom Ka Soup
This recipe made 6 servings - I don't measure a lot and everything is to taste. Just add more or less of the things you like. :)
2 Chicken breast cut up in cubes
3 cans of Chicken Stock/Broth
1 Can of light coconut milk
1 tube of Gourmet Garden Fresh Thai Seasoning – If you can’t get this product - This is what is in it (finely chopped lemongrass, ginger, coriander and chili)
Fish sauce (use sparingly it’s strong – easy to add impossible to take away)
Hot chili oil (If you don't like hot spice or heat in your food you can skip this)
Thai powdered spice blend - (garlic, onion, paprika, lemon, coriander, hot cayenne, white pepper, basil, lemongrass and cilantro)
Onions
Bell Peppers
Broccoli
Cauliflower
Carrots
Grape tomatoes
Mushrooms (I don’t like them so I don’t put them in)
Cabbage (If I had it I would have put that in)
Brown chicken in a Tbl spoon of oil, add all the vegetables, I do it one at a time as I chop it up, add in the broth, seasonings to taste, add coconut milk and last the grape tomatoes. Simmer until the vegetables are tender and chicken is cooked through.
Normally Tom Ka doesn't have as many vegetables in it but I wanted a soup that was more like a mini meal with protein, vegetables and healthy fat.
