Yummy Paleo Pumpkin Cookies

*makes approx. 21 small cookies

2/3 cup of pumpkin puree

1/3 cup coconut oil

1/3 cup coconut butter

1 tsp vanilla extract

32-35 drops of liquid stevia (or 2-3 tsp maple syrup or honey)

1/2 cup blanched almond flour

2 tsp ground cinnamon

1 tsp baking soda

1/4 tsp sea salt

1 tbsp raw cacao nibs

Preheat the oven to 350 degrees F. Mix your wet ingredients until nice and smooth. Add your dry ingredients minus the cacao nibs and combine well. Now add the cacao nibs and stir gently. Place small mounds (about a half tbsp) onto 2 parchment lined baking sheets.

Bake for 10-12 minutes. They will be quite soft and fragile when done.

Very carefully, pull the parchment paper with the cookies off of the baking sheet and let them cool on the counter for about 20 minutes. Then, very carefully again (I use the bottom of a baking sheet to transport them), move them to the fridge to firm up for 2-3 hours. If you can’t wait that long, you can stick them in the freezer for about 45 minutes.

Store in an airtight container in the fridge.
