Yum...I wanna try the banana-egg pancakes! Have you ever tried the "Banana Oat Cookies"? I mashed brown banana, 1/2 c dry oats, mix until batter-consistency, add cinnamon of even nuts/raisins if you like, put on a baking sheet lined with parchment paper, bake in 350-degree oven for about 10 or 15 mins, DELICIOUS! Great for when people come over...just scale up the recipe to make MORE
