Spaghetti Squash

Preheat the oven to 375 deg
Cut a spaghetti squash in half lengthwise, also chopping off ends.
Remove seeds and pulp (like you would in a pumpkin)
Brush inside of squash with olive oil and season with salt and pepper.
Place the squash (skin out) in a roasting pan.
Bake for 35-40 minutes until you can easily puncture with a fork.

Remove from oven and when it's cool enough to handle, scrape the insides lengthwise with a fork to remove spaghetti like strands. If it's still too crunchy for your taste, saute in a pan with some oil or butter.

That's it! It's so easy and was delicious. I didn't saute it last time, but I would definitely do it this time. Maybe pat dry it before sauteing it.

Hey how are you doing?? I have been doing so well with my weight loss until I joined this silly contest then I became obsessed with losing weight and actually gained last week even thought I was so on track with my eating.. I have found that if I try to micro manage it I am not successful.. So this week I went back to my basics and what works and lost 2.2 .. so was happy about that but not sure if I will make my goal for this contest or not but Im ok with that because at least Im back moving in the right direction..
How are you doing/feeling??

find alot of the up and down gets discouraging after a bit, so been weighing only every 5-6 days Still feel like its water retention?? just doing my best and thats what counts I guess... Good Luck and look forward to seeing your messages..

Agreed! I love Chicken Pad See Ew. It's probably my favorite food of all time, but not the healthiest.
