  • Meal prep inspo for final challenge week!

    Meal prepping is key for me when I’m trying to stick to a healthy eating goal. I like making batches of a variety of protein and veg to mix and match throughout the wk vs prepping specific meals.

    Another thing that helps me is my CSA produce box from a local farm- $30/box, organic and pushes me to eat lots of veggies, some that I might not usually pick at the store.

  • Dinner inspiration from last night! This is a family favorite for a cozy winter meal. It’s a one skillet dinner, which makes it easy and quick.
    Chicken thighs, sliced apple and purple onion, fresh rosemary sprigs, apple cider vinegar, olive oil, seasoned with cinnamon, salt and pepper.
    Not pictured: I threw in some roasted sweet potatoes to help with sugar cravings and it definitely helped!
