  • I’ve been experimenting with different meal prep ideas and I like to do things that can be frozen to save me time later. Here is my lunch today- frozen peas with a portion of frozen leftover slow cooker chicken. That recipe was basically cooking chicken breast with mixed veggies and low sodium chicken broth. I made way too much but now I have several portions frozen for my work lunches.

    Breakfast: Cappuccino protein mixed in my
    Coffee
    Mid-Morning Snack: Kale and Spinach Egg Bite
    Lunch: Creamy Broccoli and Chicken Casserole over couliflower rice mixed with jasmine rice.
    Afternoon Snack: Snack box with hummus, veggies, berries, cheese stick, and turkey pepperoni
    Dinner Menu This Week: Chicken Jumbalaya, Bang Bang Shrimp, Low Carb Pizza Casserole, Smash Turkey Burgers, and Leftover Nights.
    Snack: Greek Yogurt with Mini Nilla Wafers

My little win for the day was staying almost completely on track, even celebrating my husband and stepsons birthday! Just a very small piece of cake, no soda, no alcohol, and stopped when I was full.

I have a hard time with self-control, so today is big step forward for me.

Good Morning! Glad to be part of this group. I am from IL. I am 9+ years in my weight loss journey. I seem to fluctuate with 5-10+ lbs. the diet bet gives me the boost to get get back on track.
