Last time my husband and I went to Vegas we walked for an hour every morning while it was cool, saw lots of the surrounding suburbs off the strip as a result. Walked up every set of steps we saw, no crossing roads if we could walk up steps onto a bridge, no travelators or escalators for us. Had a turkey sandwich at the Flamingo which turned out to be a monster Turkey dinner with bread underneath it (we're from Australia definitely not what we were expecting). We shared it and it was still too much! It's all about portion size, eat your meal off a smaller plate but at the same time enjoy your holiday, LOVE Vegas.
