Creamed Cauliflower
Cut into chunks the white portion of the Cauliflower and put into boiling water until tender. Once it is tender to the touch, drain and put into mixing bowl. Add one Tbsp. Olive Oil, 1/4 c. low sodium chicken broth, pepper and blend until smooth. It takes the place of mashed potatoes in our house.

I sometimes boil cauliflower in water with a little chicken broth and then add some pasta in after a few minutes. then i drain it and make a cauliflower/mac and cheese with less cheese of course. way better than traditional mac and cheese but having a little pasta helps it keep me fuller longer.
