Hey everyone! So just an update on my healthy eating, I really have been keeping at it and keep getting impressed by my energy and how good everything tastes!! Yesterday I cooked brussel sprouts for the first time, yet it's actually very simple just mix with olive oil, salt and pepper and put in oven for 40 mins. When it came out it was carmelized brown on outside and soft in middle, I was really happy about how excellent the taste/texture was. It dawned on me, probably what intimidated me about cooking some of these foods was correctly making them/not knowing how to make them. It's worth the effort and kind of fun to do things right. I still have 4 lbs left to lose this challenge, I hope to achieve it and am crossing my fingers. xx
