  • Veggies are easy for me to get in but sometimes I find myself in a rut eating the same vegetables and not being creative with variety! Not tonight! Roasted squash, zucchini and radishes with a divine seasoning.
    Then I prepared something entirely new- hearts of palm pasta! I topped the roasted veggies and “pasta” with sautéed garlic lemon butter wild caught shrimp! 😋 Delish and super filling!

Where do you find the noodles? I’m on the hunt for a veggie pasta that I can eat, I’m all about texture though. I’ve tried one frozen kind so far that had sauce already and I couldn’t do it.

    What are some healthy substitutes you add to your meals? Do you use zucchini noodles instead of regular pasta, or ground up cauliflower for your pizza crust instead of bread?

I think I have become the queen of substitutions. Last week my husband wanted spaghetti and meatballs. He ended up getting spaghetti squash with baked lentil “meat”balls. The whole family including my 7 yo loved it. It was a wonderful healthy, vegan meal with a ton of flavor.

  • This is the brand I use
    I get them at Ralph’s which I guess would be Kroger every where else

What’s everyone’s favorite healthy lunch? Do you mix it up or tend to stick to the same thing everyday?

Great question!
I usually mix it up, but for a few days I was blending up my veggies and fruits into a smoothie for lunch. It was a quick and easy way for me to get a lot of them in.

Usually I meal prep using spaghetti squash. One squash typically makes five servings, plus I can change it up each week for different flavors. It also gives me my pasta fix.
