Thanks so much Gailsy! I'm actually going out of the country for the holidays so I won't be able to weigh in! But will be looking to join a new dietbet in the new year, so keep me posted if anything pops up!

Here you go! Bon Appetit!

1 lb. of Spinach
1 lb. of Kale
Handful of Parsley
2 lrg. diced Onions
4 cloves of garlic
1 c. of Quinoa or Rice or your grain of choice
8 c. of Vegetable stock
1 tbsp Olive Oil
1 tbsp of lemon juice
Salt and pepper and herbs to taste (I like dill!)
4 oz. of crumbled goat cheese

Sautee onions in olive oil in pan until translucent. Turn down heat and cover to caramelize the onions, stirring occasionally. While onions are cooking, heat vegetable stock in a large pot and add Quinoa. Bring to boil & add garlic, spinach, kale and parsley & cook down greens. When quinoa is fully cooked, use an immersion blender or regular blender to turn into a soup consistency. I use a regular blender & blend it in batches making sure to keep the top of the blender partially open to release the heat so it doesn’t explode! Once blended, add goat cheese, lemon juice and seasonings & mix together.
Yields about 6 servings (2 c. per serving)

Haha, yes! Obviously being healthy is my goal too, but looking good naked is pretty high up there in priorities :) Thanks for stopping by my cheerboard! I'm new DietBet so I didn't even know this existed. So fun!
