  • Had to run into the store quickly today and managed to grab some salad kits for the week and fresh veggies! Nothing too crazy, but having healthy options in our home & saving where we can has helped my husband and I so much on our journey. We love salad kits we can just add our protein with. Whats your favorite quick healthy meal?

Salad kits with bare nuggs are my go to meal as a busy mom. I usually divide the bag of salad in half as a full bag is usually too much for me. I’ll add some of the salad/bare nuggets mix to a low carb tortilla.

I love roasted veggies. Today dropped a bag of fresh brocoli floats on a pn drizzled with olive oil and balsamic vinegar. A shake of ground garlic and nutritional yeast. Cooked at 400 for 20 min. Super fancy tasting and filling. About 30 seconds hands on time.
