I don’t have her recipe but this is a great one:

Maple Cinnamon Apple Mug Cake
prep time: 3 minutes
cook time: 3 minutes
Servings: 1
1 egg
1 tbsp olive oil
2 tbsp unsweetened applesauce
1 tbsp maple syrup
1/3 cup almond flour
2 tbsp rolled oats
1/2 tsp cinnamon
Pinch of sea salt
1/4 a chopped apple
Optional toppings: apple slices, coconut yogurt, chopped walnuts.


1. In small bowl add egg, olive oil, apple sauce, and maple syrup. Whisk together until well combined.

2. Next add almond flour, oats, cinnamon and sea salt. Fold all ingredients together, forming a smooth, even batter. Lastly fold in chopped apple.
Step 3. Transfer to a greased, microwaveable mug and microwave for 2 minutes and 30 seconds. Remove and top with optional toppings before digging in!
