Beef chili is my high protein, low cost, super easy favorite, and it can all be cooked in one pot if you pre-cook the beef and drain the fat while sautéing the onion and garlic. Then just throw the beef back in (1lb) with one big can diced tomatoes, one big can kidney beans (the large Hanover size -- and rinse them first!!), ~1/3c salsa, a bunch of chili powder, some cumin, black pepper and a dash of instant coffee. Simmer until the beans are tender, stirring occasionally.
