  • Went to a arboretum nearby and got in a 3+ mile walk. The honeysuckle and lilacs smelled AMAZING!

  • Recently, I’ve been revisiting my graduate research from somebody posting a question about incretins.

    It was not my research but going back and reading about nutrition, phytochemicals and obesity I’ve been inspired to have at least one side or dish a dark leafy, cruciferous green a day.

    Sooooo, today I made kale salad.
    Diced super fine, messaged with olive oil, and tossed with apple, celery root, fresh lemon and pepitas. It tasted like dirt.

    So I added maple syrup and blue cheese. Better but it still tasted like dirt.

    I will not give up, these vegetables are bound to be delicious so how and they are a powerhouse of nutrients. Tomorrow I will sauté lacinato kale with garlic, ginger and ponzu.

I was so shocked learning about the benefits of Kale. I throw it in my smoothie and lasagna. The smoothie was fantastic (bananas, frozen berry mix, flaxseed, frozen fruit mix- pineapple, mango, peaches, and more strawberries). The lasagna...never doing that again lol.

Blah really sums up the last few days. I unexpectedly had pizza for lunch and dinner on Saturday. Lunch was on purpose (leftovers), then I went to my sister's house to help her move soil into her new raised beds. She ordered pizza to feed us all,, chips, pop. Then Sunday and Monday, I just ignored making good food choices. Quesadilla, (large amounts of) Indian takeout, several beers. Monday was more (large amounts of) Indian takeout, more beer. I went back and logged the calories yesterday. 😳 I have also been unmotivated to keep working on the yard. I am not sure if it is just the blah mood causing bad food choices or bad food choices causing the blah mood. It's a crappy cycle.

Sorry we all get off track at times and getting back on is not always the easiest. But I have faith you’re going to turn this around and keep moving forward towards the goals you want.

Partly back on track. I did have Skyline for a late lunch (it's a Cincinnati thing) - not terribly calorie friendly. But I have had all but 1 glass of water for today (64 oz goal) and I just got back from a nearly 3 mile walk. I will get out of this blah. I will get out of this blah. I will get out of this blah.

What is working best for those of you focusing on nutritional changes?

I already workout 5-6 days a week, so my problem is for sure in the kitchen. Focusing on water intake this week and then adding in some nutritional changes to hopefully get back in this game before it’s too late.

I try to add lots of veggies into meal prep. They add volume which helps make the meal feel more substantial without adding a lot of calories.

I also really like the veggies in there; meals cooked by other people feel like they're missing something now.

I track. I eat what I like as long as it fits in my calories for the day. Of course I don't eat excess sugar or carbs. I stay around 1500cals and on occasion will go up to 2000 every two or so weeks.

@Sarah S - You should absolutely make it!! Super easy to toss together before cooking the fish - I used

1 jalepeno
1/2 red bell
1 slice red onion
2 slices grilled pineapple (of course you dont have to grill it, but it added a super delicious smokiness - i had some leftover from last night)

Dice everything, toss it in a bowl with some salt, pepper, and lime juice!

  • Waiting to be verified!!! Praise the Lord, I made it before crunch time in the end. Now to keep trucking along :) Since Dec 2019 I’ve lost 65.8 lbs! I’m 6-7 lbs from my all time never thought it could happen in a million years goal!

    My husband and I have been losing together, and our next big goal is July 4th. Together so far we’ve lost over 137 lbs!!!!! 150 combined lost is our big Fourth of July goal and we are well on our way, wahoo!!!

    It is so worth it, y’all!

Thank you! @Sharon, from the beginning we knew we wanted realistic and practical for us so generally eating healthier 80% of the time, wiser choices. My hubs is low carb & tinkers with IF 16:8. We drink a LOT of water, and workout 5-6 days a week (I take more off if I’m sick or have an extra difficult period).

I’ve heard wonderful things about ww, so glad you’ve found a great fit for you :)

Thank you guys so much! I will definitely be doing that then! I was talking with the hubby and he said he’s sure we can drive somewhere not too far away so we can get reception if need be. We are going for a whole week and not sure when we are leaving just yet.


Many years ago when I was constantly on the road for work, I bought some travel scales. They were less than half the size of normal scales and could carry in my backpack. I see some quite cheap on amazon

  • Since I finished my Ireland virtual challenge for The Ring Of Kerry I decided to sign up for another challenge. Years ago I did virtual challenges with the company called Across America or Walk America can’t remember which name. I was doing a Virtual Challenge Pacific Crest but all of a sudden the company disappeared. Nobody knew what happen. So when I saw that they offer that challenge I thought I should choose it. They gave you an option up to 18 months for your time to finish your challenge. I emailed them and said because it’s just me and the amount of miles involved can I have a longer and date. They told me to email them before my 18 months and now I’ll be happy to add more time on for me.
    I’m doing this so I keep being active and hopefully after my knee replacement surgery I can be more active.
