I have one of those finicky scales, too. It can vary by as much as 1 pound within the space of a minute or two. Can make DB weigh-ins tough sometimes! :)

If the numbers are all within around a 2 lb range, that's pretty normal fluctuation. If it's more, either you need a new scale or your floor is super uneven. My floors are a bit uneven, and the weight on my scale changes when I move it a foot over in any direction, but it's usually just .2 or .4 lb differences.

This sounds just like my story, I dropped 17 pounds with my last diet bet this time last year, and now weigh 8 pounds MORE than I started at. I have to realize I need more than a diet and that I need to change my relationship with food. Not easy. But have been missing the support that I got with the last dietbet so trying it again with my eyes open. I'd say good luck to us all, but it's not luck, with hard work and perseverance we WILL get there!
