  • Few more tips on meal prep!
    I posted yesterday a few things I always have in my fridge and some simple ways I throw it together. I got a couple questions on the salad too!

    First, the way I typically meal prep, I bulk cook the items in my last post, maybe put a few meals together, and usually have more of some thing’s left over than others. That makes it so maybe one night I need to restock and prep protein, then two nights later I make a new carb, then a day later I make a new salad. One small thing I prep during the day/week instead of one or two giant meal prep days a week. So when people ask me about the salad staying fresh it’s because I’m making one every 3 or so days, putting it in a closed container. The lid I got for my big mixing bowl is from OXO (amazon or Bed Bath and Beyond) and comes in different sizes. It lays flat across the top and creates a suction with the bowl to stay sealed. LOVE IT.

    What’s typically in the salad:
    Chopped up greens- I prefer something like spinach, arugula or a mix. Dark leafy greens over romaine.
    Grape tomatoes- the salad and tomatoes will last longer if you don’t cut em up.
    Shredded carrots
    Chopped celery
    Bell pepper chopped
    Sprouts
    Beets- my fave I buy premarinated at Whole Foods. I think the brand is Love Beets. I keep these separate because they have more juice to them and add them when I’m ready to eat or pack my lunch.

    Dressing- I put it on when I’m ready to eat or pack. I don’t make any sort of fancy dressing but I do make sure that I eat a reasonable amount. If the dressing is thicker you can add a tiny splash of water to a serving and mix it up. It doesn’t change the flavor but it spreads easier so you don’t use as much.

    There’s a million different ways to make salads and this for sure isn’t the end all! Just something that works for me and may work for you!
