  • Did a lottttt today already, and finally remembered to eat at 5pm. Made a fabulous 20 minute dinner of an air fryer salmon filet on a bed of brown rice, black beans, hummus, fat free feta, and parsley. Yum! Trying to follow my version of the Mediterranean diet and thrilled with my first meal!
