  • Dinner is kale, chicken, beets, and cottage cheese, which I didn’t think I liked but recently learned makes a nice creamy texture on greens when you heat it up. Also enjoyed the rest of a big salad I had with lunch

That looks like a great combo. There’s something about juicy meat and refreshing cilantro together that just hits the spot!

I love seeing everyone’s healthy food choices dont get me wrong, but does anyone eat less healthy food and watch their calories? Or is it just me 😭😂

This question made me think. I’d say I generally get good nutrient coverage from my meals. But I have been leaning hard on low cal but less healthy crutches lately (specifically caffeine, 0 cal sweeteners, and salt). I don’t think I’ll try to make drastic changes on that front while I’m in a deficit (one mountain at a time lol!), but I will scale back a bit. How about you, are you thinking you’ll stick with what’s working, or do you feel a shift coming on?

Kirsten H.

I do not do well with restricting the "unhealthy" foods so I just try to add more veggies so I'm less hungry for the less healthy stuff. Today for lunch I had a slice and a half of pepperoni pizza, a small kale and tomato salad, half an avocado, and a boiled egg :relieved:

  • Today’s smoothie bowl featuring spinach, strawberries, protein powder, soy milk, and olive oil. The olive oil sounds weird but is actually delicious and along with the vitamin C in the strawberries, helps make the iron and spinach easier to absorb. Have a great Saturday, everyone!

  • Dinner is basically the same as lunch but I added some chicken and sweet potato to the dandelions and black beans.

That looks delicious! I love tofu and I love tacos, but it never occurred to me to make a tofu taco. Need to try that!

Mary P.

That looks really good. I may need to try this for my son. He loves tofu.

I feel like doing these challenges is teaching me a lot about what does or doesn't work for me, so I've started taking notes for myself :) Here's what I wrote today, in case it's helpful to anyone else.

1. Spiritual practice, sleep, time outdoors, and an orderly living environment are my most important daily pillars. When they are in place, good food and movement choices follow.

2. Structure, even if it’s unrelated to diet and exercise, helps me stay on track. If I don’t have time for my full morning or evening routine, I should just do shorter versions of the things I usually do.

3. Sparkling water is a fine treat, but it doesn’t hydrate me like still water does, and it sometimes confuses my hunger signals.

4. I feel better throughout the day if I front-load minerals early in the day (e.g., smoothie bowl with spinach).

5. I should respond promptly to cravings for movement, stretching, fresh air, screen breaks, etc. If I don’t, my body may “invent” a food craving to force me to take a break.

Very good points

Love this. So important to pay attention to our bodies. We are always so rushed that we don’t have time to prioritize this

  • In celebration of today’s absolutely beautiful weather, my lunch features a dish I enjoyed on repeat last summer: dandelion greens with black beans, onions, and olive oil. Today I topped it with pickled beets, avocado, and a dollop of coconut yogurt. I also enjoyed some of this salad and an egg that didn’t make it into the group photo. Wishing everyone a great day :)

Wow! Where do you get the dandelion greens? I used to prepare them for my babies’ food

Sara D.

Sharon, I’m fortunate that my local supermarket, King Kullen, carries them. They’re also sometimes sold as “chicory” instead of dandelion. They’re popular in Italian cooking, so if you have an Italian grocery store or neighborhood shop nearby, that might be your best bet :)

  • Forgot to take a picture until I was almost done, but breakfast today was two egg whites and one whole egg, a piece of whole grain (Ezekiel) toast with a light spread of grass-fed butter, and a sweet potato (diced, light drizzle of EVOO, garlic and onion powder, air fried until tender).

Peep my bestie keeping an eye on things 👀🐶 (always thinking with her stomach, true to her Labrador roots 😂)
