  • It always helps me to have some tasty and super quick keto snacks on hand for when I catch myself behind on my fats intake, and this combo is too easy and tasty not to share!

Let me tell you this gave me some major German chocolate cake vibes! I fried my waffle in butter rather than toasting it and it added to the cake flavor.

1 Birch Benders Keto Toaster Waffle (OBSESSED WITH THESE- purchased at Whole Foods)
2 Tbsp Nutiva Squeezable Chocolate Coconut Manna (Purchased from Thrive Market)
    1/2 tsp butter
Sprinking of sea salt coconut flakes (also from Thrive Market)

    Approx 310 calories/27g fats/5g protein/5g net carb (11g total - 6 fiber)

I really love this chocolate coconut manna but I haven't tried it with anything else.... any suggestions? Also I am a fan of most Birch Benders products, but I significantly prefer the keto toaster waffles to the keto pancake/waffle mix. The toaster waffles are coconutty while the mix is almondy, and obviously more prep!

  • Made a keto favorite this morning: pumpkin spice egg loaf! Its super easy to make and so tasty! A serving packs a serious fat punch and is super filling.... I won't be hungry again till dinner.

Nutruition for this plate, including the coffee:
    572 Calories
    56.2g Fat
    4.3g Net Carb (14.3 total - 2.5 fiber - 7.5 sugar alcohol as stevia)
    9g Protein

    Recipe (4 servings):
    Loaf Ingredients:
-4 oz (half package) cream cheese
    -4 tbsp butter (half stick)
    -4 eggs
    -1/4 cup of pumpkin puree
    -1/2 tsp vanilla extract
    -1 tbsp MCT oil (optional)
    -2 tbsp coconut flour
-1/2 to 3/4 tsp pumpkin pie seasoning (cinnamon, nutmeg, cloves, allspice, and ginger are what I put in mine! but I don't really measure it that well. its about 2 parts cinnamon with 1/2 - 1 part of each of the other seasonings)

    Extra Garnish Ingredients:
    -1/2 tsp butter (for frying)
    -1 tbsp Stevia maple syrup
-4 tbsp heavy whipping cream, whipped
    -Handful of fresh berries

Directions:
1. Bring all the cold ingredients (cream cheese, butter, eggs, and pumpkin, in my case) to room temperature. This helps the loaf cook evenly and easily blend smooth.

2. Preheat oven to 350 F. Lightly grease a loaf pan.

3. Add all ingredients for the loaf to a blender, or to a bowl that you can use a hand mixer in. Mix until smooth, making sure you scrape the sides of the blender or bowl to get everything.

4. Bake for 25-30 minutes, or until the loaf is set (not liquid-jiggly anymore when you shake the pan. It will puff up when it is baking, so watch for the center to "puff". It will fall a little once it cools.

5. Remove and allow to cool enough to touch. It will be easier to work with the cooler it is. When its hot it can be too soft to slice and transfer for frying.

6. Cut the loaf into quarters, and remove one quarter for frying up right now! Trust me... you'll be ready after smelling it bake. Cover and store the rest in the fridge once its completely cool.

7. Slice your piece of loaf into 4-5 slices, depending how thicc you like them.

8. Preheat a small skillet to medium heat, or maybe slightly lower, and put a little butter in for frying.

9. Fry for a few minutes on each side. This will depend on how hot your pan is. I think mine was about 2-3 minutes per side.

10. While its frying, I whip 4 tbsp of heavy whipping cream, start a cup of coffee, and rinse and slice some berries. I put some of the whipped cream in my coffee because its a little more than I need for my loaf. I then top the loaf with a tbsp of stevia maple syrup, but you can use any keto-friendly sweetener you like! Maybe even just sweeten your whipped cream with some powdered sweetener instead! Or mash your fruits up (especially if you have frozen!) and use them as a topping.

11. Plate it up, and enjoy your breakfast!

Let me know if you try this recipe out! And if you customize it I want to hear what you did, I can always use the inspiration. :) Happy keto-ing!

I want to do keto but can't stand the sugar substitutes in recipes. They ALL have that diet sugar after taste. And are soooo expensive. Honey and maple syrup are advised for sweeteners otherwise, but not keto. What are some recipes for sweets w/o sweeteners?

I've been planning on making chia pudding, but I keep forgetting to do so.

Chia pudding is great because it's so easy and can be made so many ways!

Hey Keto People!

I've done keto several times as a diet plan, but I'm not a full-time keto-er. Overall, I think keto can be a very healthy way of eating for most people. I've been in ketosis for a little over a week and just had my yearly bloodwork and measurements done for blood pressure, cholesterol, triglycerides, and fasting glucose. I am happy to report that my measurements were all considerably good, except for my LDL/Total Cholesterol being a little elevated (hello, saturated fats). I know LDL isn't necessarily related to risk of heart disease, and because my overall cholesterol ratios are good I was given a good bill of health. My results are below, and for reference I am a 29 year old female with a BMI of about 23-24:

Blood Pressure: 90/61 (normal range is < 120/80)
Total Cholesterol: 216 (normal range is 125 to 199)
HDL: 74 (normal female range is > 50)
LDL: 131 (normal range is < 100)
Total Chol/HDL Ratio: 2.9 (normal range is < 5.0)
Non-HDL Chol: 142 (normal range is < 130)
Triglycerides: 53 (normal range is < 150)
Fasting Glucose: 76 (normal range is 65 to 99)

So, what is everyone else's experience with keto and biometric readings? I'm assuming that since this is a keto group, no one here has had negative health effects from the diet or they wouldn't be following it. Twice now I've had overall "healthier" results (with the exception of LDL) while on keto than when I am eating a more typical, but still healthy diet. Has anyone else experienced the same? What about doctor's concerns with your diet? I've had doctors that did not raise an eyebrow when I mention keto, and I've also had doctors tell me how I'm basically asking for cardiovascular issues, even with my health being considerably good.

Very curious to hear other's experience with biometric readings and doctor's advice/input on the lifestyle!

Hi Katie,

I haven't had bloodwork done since I've been in ketosis, so I don't have those numbers to compare. I've been in ketosis steadily now since January 27th (I've been off and on keto for years). This is probably the most consistent I've been with measuring my ketones. Even though I don't have bloodwork I can tell you that being on keto has alleviated the symptoms I've had from autoimmune diseases (psoriasis, psoriatic arthritis, and morphea) and fibromyalgia. I just saw my Rheumatologist on Monday the 2nd and he was very impressed with the progress I've made since seeing him last in August 2019. I told him I was doing keto and he said that's great, keep up the good work. My blood pressure was 111/79, and I'm 47 years old. I have more energy and less pain and fatigue than I've had in years. I'm feeling like myself again and am amazed. I follow a clean keto diet and always think of what veggies I can eat first and then build my meals around whatever low carb veggie I choose.

Katie S.

Yvette, thanks for sharing your experience. I am so glad to hear that the keto lifestyle is improving your health so much, that's amazing! I think your approach is very smart. People often try and write off vegetables from the diet because they are carbohydrates and I think that will certainly lead to health issues. Honestly I eat more veggies when I am keto than when I am not, because I also have to plan my meals around them!

Wishing you the best in your continued keto health journey! :)
